DUCK MEAT COOKED AND PRESERVED IN ITS OWN FAT all our confits are prepared in the traditional way.
After the meats have been dressed, hand-salted (not pickled), washed, they are cooked in their own fat.
Until the meat is tinned, everything is done by hand
Seasoning only consists of salt and pepper.
TIP
Let the fat that covers the meats melt in the tin in a water bath, preferably.
Then, take out the pieces of confit. If the fat is taken in when turning out, the meat will tear.
TO SERVE IT
WARM
Let the pieces of confit get brown on the skin side in a frying pan or place them under a grill and let the skin get brown or just warm them up in the oven.
Serve with potatoes fried in the fat of confit
COLD
Eat it cold after the fat has been removed, with a salad to your own taste and according to your imagination.
TIP
Keep the fat for cooking, as Gascons do. You can use it to fry all your vegetables when cooking meals
The fat of confit may be kept several days in the refrigerator.
